Ability to stop projects from uploading individually -  So be able to stop WCG from uploading but all other projects act as normal.

Not possible.
1) Your options are to stop all WCG tasks just before they finish, you can set a rule for that.

2) Another option would be to run another BOINC instance with WCG only and disable Network communication.

I like the "multi-instance boinc" - 1 per project thing.

I remember in the Pentathalon we used iptables/firewall rules to block a project to prevent uploading results until the start of the event. We could have an menu option that "prevent upload" and manage the boinc machine's firewall rules?

BoincTasks runs on Windows and Mac, and probably dozens of different ways on Linux.
You can make a shortcut.
